素菜大行其道。素菜一定是安全食品吗，素菜是以植物类、菌类食物为原料制成的菜肴，大家知道有的菌类是不能食用的，植物类素菜也不一定都能食用，而且还要看食用者的自身情况。

“肉差不多了，再点些素菜吧。”在餐馆吃饭，咱们得兼顾口福和健康，“素菜我要地三鲜”，“我要干煸豆角”……这样一顿荤素搭配的美味，营养合理吗?

“洗过‘油锅澡’，再健康的素菜也变得不健康了。”营养师表示，地三鲜、干煸豆角、过油茄子，虽是素菜，但一过油，热量比肉还高。

地三鲜的主要食材是土豆、茄子、青椒。土豆经过高温油炸后，会生成丙烯酰胺等致癌物;茄子富含维生素P和抑制角苷，常吃能降血脂，但具有超强的吸油能力。

过油茄子，简直变成了一个个小油包;青椒经过油锅“洗礼”，维生素c差不多也消耗殆尽了。

干煸豆角，听起来似乎与过油无关，其实也多半是油炸过的。过油的干煸豆角不仅热量超标，还存在安全风险。豆角如果不彻底做熟，就可能导致食物中毒。而在油炸时，豆角可能外焦里生。

营养师表示，点素菜要遵照“两少两多”原则。“少放点油，少加点盐。“两多”则是，多选当季菜，多选凉拌菜、蒸炖菜等。这三种常见的素菜我们在点的时候需要多加注意，而且还需要我们甚至选择的食物就是以下的几种有害物质，我们来看一下有害物质的排行。

有害食物1：油条

油条是不少人早餐的选择，可油条中大多加明矾。这种含铝的无机物，被人体吸收后会对大脑神经细胞产生损害，并且很难被人体排出而逐渐蓄积。长久对身体造成的危害是，记忆力减退、抑郁和烦躁，严重的可导致"老年性痴呆"等可怕疾病。

解物：豆浆

如果你在食用油条时，佐以豆浆，那么就在无意中保护了自己。因为豆浆中富含卵磷脂。科学家发现给老年性痴呆患者服用一定剂量的卵磷脂，可以使他们的记忆力得到一定的好转。

油条在加工过程中，需加入明矾和苏打等含有铝的膨化添加剂，而研究表明，过多摄入硫酸铝会对中枢神经系统造成慢性损伤，剂量过大则增加患老年痴呆的风险。此外，过量的硫酸铝也会增加患心脏病和心脑血管疾病的几率。

按照世卫组织的要求，一个50公斤体重的人，每日的铝摄入量不应超过50毫克。国家相关食品标准规定，食品中铝含量不能超过100mg/Kg。由此估算，正常人每天吃上两根油条是不会对健康有大的影响。

但问题是，对于铝含量的添加，总有部分加工者不严格按国家规定生产，导致油条铝含量超标的事件屡有发生，使得油条越来越称为危险食品的代名词。所以，吃油条还应谨慎，吃过油条就不要再吃含铝量大的食品如粉丝。吃的时候搭配蔬菜和粗粮，可干扰铝的吸收。此外，儿童神经系统正处于发育时期，要少吃。铝对胎儿的神经系统发育可能造成影响，孕妇要少吃。老人新陈代谢的能力下降，更少吃为妙。
